Blend of 3 grape varieties with an intense aroma and exquisite taste..

45% CHARDONNAY

Coming from the extreme South of France, region Roussillon making a border with Spain.

Soil schists, foothills of Les Alberes Mountains, ending Pyrenees and dropping in the Mediterranean sea.

The position of the vines are East-South, very sunny exposition but with fresh nights, influenced from the sea, typical Mediterranean climate.

Mechanically harvested during the night, direct pressings with no destemming.

Cold settling in stainless steel tanks under 10°C for 24 hours.

Alcoholic fermentation on 14-15°C 10 days.

Aging on his own fine lies for 3 months with mechanically regular stirring 3 x a week. fresh white peach and some minerality.

40% SAUVIGNON BLANC

Comes from Gascony, South-West part of France, foothills of central Pyrenees, soil Limestone clay, typical continental climate.

Mechanically harvested on law potential alcohol maturity to preserve the primary aromas and acidity of this variety.

Harvested during the night adding Nitrogen ice sticks to preserve grapes from the Oxygen, pneumatic press.

Cold settling in stainless steel tanks under 10°C for 24 hours. and Alcoholic fermentation on 14-15°C 10 days.

As soon AF finished, again cold settling for 24h and racking the clear juice covered by CO²….Lemon and lime, with some red grapefruit sweet bitterness on the end of the palette.

15% VIOGNIER

North of Minervois, foothills of Black Mountain, with influence from the Massif Central de France.

Soil Limestone, position South, harvested on 14-14.5 potential alcohol to obtain rounded honey and well maturated pear flavours with a touch of apricot’s.

Alcoholic Fermentation in 500 litres wooden vats, American and
French Oak on 16-18°C.

Partially Malolactic Fermentation in barrels 35 % of total volume), with 6 months aging on lies with searing 2-3 times a week bringing us layered aromas, buttery and Acacia honey, and toasted nuts notes.

These three parts moved from three different vine regions
of the one of the biggest wine regions in the world.
