One of the great differences between wines and others, lies in the grapes that have been developed. We could say that grape varieties there are "thousands", but when appropriate grapes for wine making is concerned, the number is reduced to a few hundred. Bodegas Fernando Castro know the personality of the wine is marked by the variety of the vine and the grape selection in the process of collection and processing. Within this Production Zone in the White Varieties and Airen, Tempranillo or Tinto Cencibel are the most important, because for centuries its cultivation is present on this earth. It is true that in recent decades have added new grape varieties, that after the relevant studies have demonstrated a high adaptability to the general conditions of the production area.
Airen. Clean and bright wine pale straw yellow color, sometimes with a golden hue and rarely greenish or steely. Aromas from moderate to good fruit intensity with clear tones clearly remember the apple or banana and sometimes with faint hints of almond and wild flowers. A dry mouth or something are doomed, light body, with little extract of fresh flavor not too acid.

Sauvignon Blanc. It is considered the finest variety after Chardonnay, known for their strong potential aromatic wines reminiscent of freshly cut grass. Must be developed with the intention of obtaining a not too alcoholic product and thus develop their full potential and good qualities, resulting wines with noticeable acidity, nice straw yellow.
Moscatel de Grano Menudo. Its main difference from other moscateles is the small size of the grapes. Wines are noted for their high aromatic potential, reminiscent of flowers and fruits. It has good ability to mix with other less aromatic varieties.
Verdejo. It is distinguished by its pleasantly wild and fruity flavors at once, with a certain structure on the palate, finishing with a slightly bitter finish, but with a background sweetness that gives the wine its distinctive personality.
Cencibel. It is within the native varieties best suited for aged wines of high quality. It has also proven to be very valid for young wines when they are developed for this purpose, its versatility makes it also great for pink.
Garnacha. It is a variety that is mainly for the development of young wines and rosé because it generally predominant anthocyanins on tannins, not proving suitable for aging, unless blended with other red varieties. The resulting wine has aromas of fine sweetness, with hints of ripe red fruit and flowers.
Cabernet Sauvignon. Ideal for aging wines by variety behave good structure with a high total acidity and very noticeable tannic richness, resulting wines of intense color and pungent aroma of violets and go.
